That's Life Soup is a  SLOWFOOD café, serving traditionally and innovatively prepared soup, sandwiches, salad, and desserts.  They strongly believe in supporting local economies as it makes a difference to the taste, quality and nutritional value of their food.  They us local fresh produce, meat, poultry, and dairy products, with an appreciation of the interconnected web of sustained economic stability.

Some of their more complicated Italian and Asian soups taste so delicious, that after one bite you understand why they took so long to prepare.  
Each soup, salad, sandwich, and dessert is hand made with all their own pestos, tapenades, salad dressings, stocks, freshly grated cheeses, fresh herbs, and hand cut meats.  

Owner Pam Root aims to have "food for meat people and for veggie people." Asked about the full flavor of the "Vegan Seven Bean Soup," she confides, "I don't cook bland." The "Chicken with Lemon and Orzo" is a testament to that - the just-so lemony broth is made with Misty Knoll chicken bones and chock-full of irregular-sized chunks of white and dark meat that clearly came from a whole chicken; the garnish of minced parsley harmonizes perfectly with the citrus. One tasty salad is a combination of mixed greens, roasted red peppers, manchego cheese and spiced nuts in wasabi vinaigrette.

That's Life Soup has been prepared with loving care, with ingredients that are as clean and pure as possible, and with respect for all the incredible vegetable, chicken, and meat providers, growers, foragers, bakers, and dairies throughout Vermont. Root changes the soup selections daily

But on Fridays you can always get pho — a street-food staple in Vietnam. The fragrant, flavorful beef broth made with bones from grassfed Greenfield Highland Beef from Greensboro, replete with noodles and thin strips of meat, comes topped with slivers of caramelized shallot. A dish of hot sauce and a lime wedge arrive on the side.
That's Life also has "French Grille" sandwiches and seasonal salads. Variety is encouraged here.. There's always at least one vegetarian potage, and both vegan and gluten-free items are clearly labeled.
